VEGAN – GLUTEN FREE – PALEO
Sugar sugar, ah honey honey, you are my candy girl…and you got me wanting you! You know the song, right? If it was before your time, go listen to it! Best ever!
So here lies the struggle. “They” say it is best that we cut out sugar all together and not take a bite of anything that resembles delicious sweetness. I've tried, I've tried! I still need it in my life from time to time! So at this point, I am just trying to make better choices when I get a craving for something sweet.
RULE OF THUMB- Try to choose a nutrient dense option to get the most out of every bite.
Before I dive into how to make Date Paste, here are the reasons why I chose dates as one of the healthiest sweeteners. Below is a chart that will help you determine the nutritional value, and the calories that you are looking for.
GLYCEMIC INDEX
DATE PASTE RECIPE
Ingredients
1 cup – about 10 Medjool dates, pitted
3/4 cup water
OPTIONS: Feel free to change it up a bit! You can add:
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice
I soak the dates in a cup of hot water for about 20 mins. This will soften the dates to get a smooth and creamy paste.
After about 20 mins of soaking, throw everything in a high speed blender and process until blended and smooth. This yields approximately 1 1/4 cups.
If you would like to make DATE SYRUP, add more water. For a cup of dates add 1 3/4 cups of water. If you want a thinner syrup add more water.
Store in the refrigerator for up to 3 to 4 weeks.
That's it! I hope this helps you to make some wise choices when it comes to the infamous sugar cravings.
Thank you for stopping by, and I hope you visit often!
