With the hot summer days and nights upon us, having this healthy treat in the freezer is a must!
Normally I make my own Icelandic yogurt and Greek yogurt, but for this light snack I use Dannon Oikos Triple Zero Vanilla. I tried using my homemade yogurt, and personally I love the “dessertie” taste of this yogurt for this recipe.
Thinly slice the fruit of your choice. I find that most types of berries and kiwi work best. Bananas and apples begin to turn brown so they aren't very pretty, and I haven't mastered the citrus fruit. If that's your flavor give it a try!
Grab the baking sheet – one with a lip around the edge is best. Line it with parchment paper, then spread a thin layer of yogurt, from edge to edge. I found thin is best, but please experiment to what you like. Since these are just broken into pieces after freezing, I find it much easier to break off a bite of delicious frozen-ness if the yogurt and fruit are rather thin.
Add your fruit to the yogurt. I gently pressed each piece into the yogurt. Sprinkle unsweetened coconut on top. (optional)
Pop this in the freezer overnight, and tomorrow you'll have a beautiful healthy pick-me-up! Break into the size that works for you, store them in a bag, then back to the freezer.
