Breakfast is a struggle for me. I want healthy and hearty to get the day started, yet it takes creativity for me to actually love the first few bites in the morning. These healthy banana pancakes always do the trick. They are protein packed, gluten free, refined sugar free, and delicious!
You might have seen this recipe hanging around the internet for a while. It started out with only 2 ingredients- 2 eggs & 1 banana. It's good, but I wanted fluffy and hearty! I hope you find these options as tasty as I do.
WHAT YOU NEED:
FOR 4 or 5 MEDIUM PANCAKES
- 2 Eggs – (farm fresh are the best) great source of protein
- 1 Banana (organic preferred) – adds dietary fiber, vitamin C and potassium.
- a pinch (1/8 tsp) baking powder – adding baking soda and baking powder gives the pancakes their fluffiness
- a pinch (1/8 tsp) baking soda
- 1 tsp cinnamon (optional)
- 1 heaping TBL Almond Pulp Flour – adds protein (pulp from making Almond Milk – click on link for how-to make this healthy drink) OR you can use store bought almond flour or coconut flour.
- Unrefined Coconut Oil <–I use this one. Pure, Unrefined, Cold Press, Organic Extra Virgin Oil. Unrefined has the coconut flavor, which is what I want for this recipe-
- In a bowl, mash the banana. I like it a little chunky for more texture and banana goodness in every bite!
- Mix all the ingredients together.
- Your pan should be low to medium heat with about a TBL of coconut oil. Once melted, spoon the batter into 4″ pancakes. Flip when the baking powder is activated / slightly puffy.
- Don't step away too long, they only need about a minute on each side. Now stack 'em up and enjoy!
To stay on the healthy side, you can top with Grade A/B Organic Maple syrup, Organic Raw Honey, or ghee butter. Pictured here, almond butter and fresh coconut flakes. Plain is good too! They don't really need much.
To change it up a bit you can add any of these to the batter before cooking.
- a splash of vanilla
- cocoa chips
- chopped nuts
- fresh coconut flakes
