PLANT BASED ENERGY BITES
Making fresh almond milk weekly leaves me with an abundance of raw almond pulp. Experimenting and creating recipes with the left over almond pulp can be challenging, but fun!
I am happy to say that this is one of my favorite almond pulp uses! So let's get started!

Crushing it with these delicious and healthy energy bites!
PLANT BASED ENERGY BITES
- 1 cup almond flour / meal (dried almond pulp from making almond milk)
- 4 Tbsp Raw Almond Butter
- 12 Medjool Dates (pitted)
- 1 tsp of Cinnamon
- Dash of Salt
- 1 tsp Vanilla Extract
- 1/2 cup Chia Seeds
- 1/2 cup Unsweetened Shredded Coconut
- 1/2 cup Hemp Seeds
Combine the raw almond butter, dates, cinnamon, salt, and vanilla in a food processor. Process until the mixture has a creamy texture. Next, add the almond pulp flour and process. It will turn into a clump of raw dough! If it doesn’t, add a splash of almond milk to bring it together.
In another bowl combine the chia seeds, shredded coconut and hemp seeds. Roll the dough into 1 inch balls (I usually get about 20 – 25), then roll in the combined seeds and coconut flakes. Place in the refrigerator for few hours. You can freeze these as well, but chances are you will devour these delicious energy bites before they make it to the freezer!
