ROASTED CHICKPEAS
A HEALTHY & DELICIOUS SNACK
You are going to love this tasty burst of healthy crunch! Add any seasoning you are craving…from cinnamon and honey to garlic and parmesan. It's all good!
Check out the health benefits of chickpeas (garbanzo beans.) Not bad for a snack or toppings on a salad.
WHAT YOU NEED:
BASIC RECIPE
Bake at 400º for 30 – 40 mins or until peas are golden and crispy on the outside. Stir every 10 mins
- 2- 15 oz can Organic Garbanzo Beans (Chickpeas)
- 2 TBL Olive oil
- choice of seasonings (ranch, taco seasoning, McCormick salad supreme, spicy chili powder, etc)
SEASONING IDEAS:
SWEET & SAVORY
- 2 TBL organic honey
- 2 tsp cinnamon
- 1 1/2 tsp sea salt
SOY & GINGER
- 1 TBL soy sauce
- 1 TBL olive oil
- 1/2 tsp ground ginger
ROSEMARY & LEMON
- 2 TBL olive oil
- 2 tsp dried or fresh rosemary
- 2 tsp lemon juice
- 2 tsp lemon rind zest
- dash of garlic (optional)
GARLIC & PARMESAN
- 1 1/2 TBL shredded dry par
- 1 tsp. dried crushed rosemary
- 1 garlic clove, minced
- 1/8 TBL. garlic powder
DIRECTIONS:
- Preheat oven to 400º
- Drain, rinse and spread out the peas on a cotton cloth (or paper towel). Pat the peas to make sure they are dry. Remove any chickpea skins that come off while drying. If you can't get them all, no worries!
Once dry, place the peas in a bowl, then add the olive oil. Make sure they are coated well. Now toss in the seasonings. Again, coat well and evenly.
Now grab your baking sheet and line with parchment paper or aluminum foil. Spread the chickpeas evenly. I sprinkled on a little more seasoning for good measure.
Bake time can very from 20 to 40 mins. Seriously! Be sure not to over cook them as I did the first time. They were too crispy and dried up. That batch went in the garage. So be sure you check them, and / or move them around every 10 mins. Once they are golden and crispy on the outside and soft on the inside take them out, let them cool slightly, then you're ready to eat! So so good!

- roasted chickpeas
- gluten free soft tortilla
- lettuce
- tomato
- cucumbers & radishes (optional)
- homemade ranch dressing or cashew cream (recipe for both coming soon)
